I have a dear friend who recently introduced me to an amazing company The Gourmet Cupboard.

I am pretty sure it is because she knows I am not a great cooker and probably feels sorry for my family. I am an “always on the go” type person, so I knew when I saw how easy these kits were, I was down to try it.

After my first few mixes, I was immediately hooked! These are the best things that have come along since the microwave! In my opinion of course! The flavors are amazing and super easy to make!

Easter Cupcakes Recipe

Easter is so much more than just Easter baskets and Easter bunnies. As a Christian, this is the day of celebration of the resurrection of Christ. This year we dedicated our March Children’s church for Easter celebration and decided to have an Easter theme lunch for all the children. I made the cupcakes and they were a big hit, I decided to share my recipe and decorated cupcakes.

Ready in 40 minutes

Yield: 20 – 25 Cupcakes

INGREDIENTS

  • cups flour
  • 1teaspoon salt
  • teaspoons baking powder
  • 1cup butter softened
  • 3cup sugar (if you like your cupcakes very sweet, add a little more.)
  • eggs
  • cup milk
  • teaspoon vanilla extract
 DIRECTIONS
  1. Preheat oven to 375f or 190c; line muffin cups with papers.
  2. Cream butter and sugar until light and fluffy. beat in eggs one at a time.
  3. Add flour (mixed with baking powder and salt) alternating with milk beat well; stir in vanilla.
  4. Divide evenly among pans and bake for 18 minutes. Let cool in pans.

Ready in 10 minutes

Yield 12 Cupcakes

INGREDIENTS

  • 2cups powdered sugar
  • 12teaspoon vanilla
  • 12teaspoon milk, add more to the desired consistency
  • 1dash salt (may substitute or omit)
  • 14cup butter (for the Buttercream Icing you would add the butter to the recipe)
 DIRECTIONS
  1. Mix powdered sugar and vanilla.
  2. Add milk teaspoon by teaspoon until desired consistency.
  3. Dash salt.
  4. Note: Do NOT pour in the milk.
  5. Trust me.
  6. Do this as instructed, or you will have to keep adding sugar until you get a good consistency, and then you will end up with enough icing to cover the surplus amount of cakes!

For the decoration, I mixed coconut with green dye and used that for my “grass”. I then added mini whopper eggs and blue peeps.

Basic Cheesecake Recipe

It’s time to start planning those recipes that make Easter dinner special!

A luscious, creamy cheesecake is a great way to top off such a gathering and you can bake one at home, just like the professionals do.

Many professional bakeries use the water bath method of making cheesecake.  When using a water bath, a batter filled springform pan goes inside a larger water-filled pan.  The water holds just the right temperature to keep egg proteins in the batter from bubbling to the surface which can cause undesirable cracks.  The result is a rich, creamy dessert baked uniformly from the edges to the center and is smooth across the top.  The Easy Bath Cheesecake Wrap can help make that happen!

Basic Cheesecake Recipe

Ingredients:

CRUST:

1 ½ cups graham cracker crumbs

½ cup sugar

4 tbsp (1/2 stick) butter

BATTER:

2  8oz pkg (1lb) cream cheese

1 ½ cups sugar

¼ cup flour

1 tbsp Vanilla (not imitation)

3 cups (24 oz) sour cream

4 eggs at room temperature

Preparation:

First, remove the eggs from the refrigerator to come to room temperature.

Preheat oven to 300F.

Prepare crust:

Melt butter in the microwave for 45 seconds.

Mix graham crumbs and sugar in medium bowl, add butter and mix well.

Spray collar of the pan with bake-release spray or vegetable spray.

Press crumb mixture into bottom of pan tightly with the bottom of a flat glass.

Bake at 300F for 13 minutes.

Prepare batter:

Soften cream cheese in microwave on defrost or low for approximately 3 minutes.

Add the sugar and flour, mix until very creamy, scraping the sides often.

Add the vanilla and continue to mix.

Add the sour cream and beat until incorporated.

Add the eggs, 2 at a time, but only barely beat, just until mixed in.  DO NOT OVERBEAT!

Place springform pan with prepared crust into the Easy Bath Cheesecake Wrap.

Place both into the water bath.

Pour batter into prepared crust.

Fill water bath with tap water to designated fill line and place in the oven.

Bake at 300F for 1 hour.  Then turn off oven, leave cheesecake in oven with door ajar 6-12” for 1-2 hours.

Remove from oven, from the water bath and leave on counter for another hour if possible.

Then place in refrigerator overnight.  Next day, loosen collar and remove gently.

Serve and enjoy as is or top with fruit or anything you choose!  Also freezes well.

Ginger Whiskey Cider

Ingredients
  • 2 oz. Hard Cider
  • 1 oz. Whiskey
  • Brooklyn Crafted Ginger Beer Mini in Traditional, to fill
  • Crushed Ice
Directions
  • In a 12-16 oz. high ball glass, combine the hard cider and whiskey. Fill the glass with crushed ice and top with Brooklyn Crafted.
Apple Ginger Bourbon Fizz

Ingredients
  • 1 oz. Bourbon
  • ½ T apple butter
  • 4 oz Brooklyn Crafted Ginger Beer Mini in Traditional
  • Lime Wedges
  • Ice
Directions
  • Add ice, bourbon and apple butter to a cocktail shaker and shake vigorously. Pour over ice. Top with Brooklyn Crafted and garnish with a lime wedge.
EASTER
Gingered Apple Sparkler

Ingredients
  • 1.5 oz. handcrafted Vodka
  • 1.5 oz. sour apple liqueur
  • Splash of Angostura Bitters
  • 4 oz. chilled Brooklyn Crafted Ginger Beer mini in Lemon/Lime
  • 1 maraschino cherry
  • Ice
Directions
  • Fill a cocktail shaker with ice. Add the vodka, liqueur and bitters; shake well. Strain into an ice-filled highball glass. Top with Brooklyn Crafted and the cherry.
Peach Nectar Ginger Beer

  • 1.5 oz. Handcrafted Peach Vodka
  • 3.5 oz. Brooklyn Crafted Ginger Beer Mini in Mango
Directions

8″ Green Earth Frying Pan – Ozeri Review

 

This pan is by Ozeri and is by far my favorite! I love how evenly it cooks and how easy it is to clean. I use it for my eggs in the morning, it is the perfect size for that and my grilled cheese.  This pan is very well made yet light to carry. It comes with a cover to place over while not in use to keep it from scratching. I am able to layer it with my others without any worries.

This pan heats fast which helps in the busy mornings. This is my second pan from Ozeri and I have never had one chip or flake! This no stick has lasted me over a year on by bigger frying pan. Needless to say, I hope to continue to use these wonderful pans!

Easter Cupcake Recipe

I love everything Easter. It is one of my favorite times of the year, probably because it is the start of spring. This year I am practicing my famous cupcakes, I love to make these for parties and get togethers.

READY IN: 40 minutes

INGREDIENTS

1⁄2 teaspoon salt
2 teaspoons baking powder
1⁄2 cup butter softened
3⁄4 cup sugar (if you like your cupcakes very sweet, add a little more.)
2 eggs
1 cup milk
1 teaspoon vanilla essence (optional)

DIRECTIONS
Preheat oven to 375f or 190c; line muffin cups with papers.
Cream butter and sugar until light and fluffy. beat in eggs one at a time.
Add flour (mixed with baking powder and salt) alternating with milk beat well; stir in vanilla.
Divide evenly among pans and bake for 18 minutes. Let cool in pans.

You can add any directions you want with little peeps or just jelly beans. I love adding green died coconut to make it look like grass.

Easy & Yummy Peach Cobbler Recipe

If you are looking for a great, easy and quick dessert recipe then you need to try this! I love to make it for family get-togethers or church potluck. If you need more you can double up on the recipe!

Ingredients:

1 (16 ounces) Can Peaches in Heavy Syrup

1 Cup Suger

1 Cup Self Rising Flour

1 Cup Milk

1/2 cup Butter (equals to 1 stick)

Directions:

Set oven to 350 degrees

Melt butter in 9 x 13 pan

Mix milk, flour, sugar, pour over melted butter, then add peaches on top, spread evenly.

I love to sprinkle with cinnamon!

This makes a great dessert especially if you add some vanilla ice cream.  This will serve 8 to 10 servings.

 

Slow Cooked Venison Recipe Instant Pot

Living in South Texas we are blessed to be able to stock the freezer every year with a deer. This year was no different. I threw a recipe together and wanted to share it since it is so easy and tastes amazing!!

Venison Slow Cooked Mushroom Steak & Gravy

Ingredients:

1 to 2 pounds of Venison

1 package of dried onion soup mix

1 can of cream of mushroom soup

2 tsp. of Tony Chachere’s Creole Brown Gravy Mix (or seasoning)

1/2 cup chopped onions

1 cup sliced mushrooms

Directions:

Mix everything together except the meat, layer the meat then the mix then the meat again then the mix. Do not add water!

Cook on slow cook for 6 hours.

I boil Skinner medium egg noodle and serve it over noodles for a delicious quick and easy meal!

  2. Heat oil in a skillet over medium heat; drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip, and cook until browned on the other side, 3 to 5 minutes. Repeat with remaining batter.

I like preparing them the night before and letting the husband wake up and have them ready for me when I wake up.
