Poor Boys Potato & Cheese Soup Recipe. I live in South Texas and this has been the craziest weather I have ever seen. First, we had a hurricane in August, then snow in November. Today the whole state of Texas is shut down because of the freezing weather! Schools are closed and offices are everywhere. We cannot drive on ice or snow therefore we stay home when it gets this bad! I can’t tell from day to day if it’s spring or is it winter. I’m convinced we’re going to skip spring this year and go straight into summer.
The wind is so bad the electricity is flashing. I decided to make something yummy, warm, and quick!!
So I am throwing together one of our favorite recipes using what I have here in my pantry and refrigerator!
Poor Boy’s Potato & Soup Recipe:
Ingredients
1 can of Chicken Broth
2 cups of Water
6 slices of thick bacon
5 to 6 potatoes
1 can cream of chicken
1 cup of sharp cheddar cheese
Several + chopped green onion stalks
1 tsp salt
Directions
Add broth and water, green onions, salt, and potatoes. Boil till potatoes are soft. Do not drain, add cream of chicken and cheese and green onions, and cooked bacon. Simmer till cheese is melted about 10 minutes.
Save some green onion, shredded cheese, and bacon bits for topping.
I always freeze leftover French bread so I am going to slice that up and add garlic powder, salt, and butter then toast it.
It’s thundering, raining, and moody here. So this will be a perfect recipe on this slightly cold, and dreary day. I’m glad I found it. Shared!
