Homemade Pimento Cheese Recipe. Summer is on the horizon and I’m already making a meal plan while the kids are home for summer vacation. We are a busy family. This year is our first summer in our new ranch home that we recently built. We’ve been adding fruit trees and livestock and plenty of chickens so the kids can collect eggs. We even have a garden started so we’ll have fresh vegetables for our meals.
For lunch I love sandwiches because it gets the kids in and back out where they want to be, quicker. They are enjoying their best life on our new Texas ranch.
One of our favorite sandwiches is made from homemade pimento cheese. It’s cheesy, creamy, and chock full of flavor. This recipe is one I learned from my mom. She’s given permission for me to share it with you and I hope you enjoy it as much as we all do.
INGREDIENTS:
2 cups shredded cheddar cheese
8 ounces of cream cheese, softened
1/2 cup mayonnaise
1/2 teaspoon garlic powder
1/4 teaspoon paprika
1/2 teaspoon onion powder
4 ounces diced pimentos, drained
1/2 teaspoon dried mustard
INSTRUCTIONS:
With an electric mixer, mix the cheddar cheese and cream cheese together. Mix for 2-3 minutes.
Add the mayo and mix.
Add the garlic powder, paprika, onion powder, and dry mustard. Stir everything together.
Mix in the pimentos.
Refrigerate for at least 10-15 minutes before serving.

This sounds delicious. I’m doing the same thing. Except I’m meal planning for the summer to stick to a strict budget but I have to take into account that if it’s not good, the kids aren’t going to eat it. They love cheese (and I do love cream cheese) so I’m going to give this a try. My favorite sandwich is a BLT. There’s just something wholesome and comforting about bacon sizzling on my stove.
